Zhou Cun's baking technology has a history of more than 1,800 years. According to Zizhi Tongjian, in the three years since Emperor Heng of Han Dynasty Yanxi, Hucai vendors have been exiled in Shandong Province, handed down from generation to generation and swept all counties and counties.
On June 7, 2008, Zhoucun's cooking technology was approved by the State Council and listed in the second batch of national intangible cultural heritage list.
Zhou Village has a long history of baking cakes. As early as the mid-Ming Dynasty, the Jia Chamber of Commerce and Commerce gathered in Zhoucun. All kinds of snacks came into being at the same time. A kind of "hu cakes oven" pasted with baking Hu cakes was introduced into Zhoucun. The restaurant owner adopted the fragrant and crisp characteristics of coke cakes and created a popular crisp barbecue by pasting Hu cakes. It has a history of more than 1,800 years. According to Ziye Tongjian, in the three years of Yanxi (160 A.D.), Emperor Huan of Han Dynasty, there were people who sold mustaches (sesame pancakes) in Beihai (now in Shandong Province). After the sixth year of Guangxu in Qing Dynasty (1880), the old bakery of "Jiuzhai" used paper packaging which did not pollute the environment. This form has been followed up till now. In the 1950s, the old store of "Jiuzhai" merged into Zhoucun Food Factory and became the predecessor of today's Zhoucun Burnt Cake Co., Ltd. As the successor of a century-old brand, Zhoucun Burning Cake Co., Ltd. inherited the production technology of Zhoucun Burning Cake and further developed it.
Zhoucun pancakes are made from simple materials, such as flour, sesame seeds, sugar or salt. It is famous for its thin, crisp, fragrant and crisp. Thin means that the pancake is like a piece of paper, and when it is folded, it will send out the sound of "brushing", "crisp" means that the pancake is broken when it is chewed at the entrance, and then it falls to pieces when it is lost; fragrance means that the pancake is not greasy when it is chewed for a long time, the more fragrant the pancake is chewed, the more fragrant the aftertaste is endless; crisp is complementary to crispness. Give people a better taste. The unique traditional handicraft, raw material formulation, stretching and baking are the key to the success or failure of Zhoucun BBQ, and the core of which lies in the word "baking". Baking mainly depends on the time of heating, so-called "three cases and seven fires", if not master the skills of baking, the quality of baking cake will not be good.
Zhoucun's cooking method can be roughly divided into three steps:
The first step is to put flour in a basin, add 250 grams of water, and then add salt and soft flour. Wash sesame seeds with water and dry them.
The second step is to twist the dough into strips, pick up forty-eight toppings and make them into regular circles, dip them in water one by one and press them flat on the ceramic piers, then extend them outward into round pancakes, and then wipe them with water to make the water side stick down with sesame. Take the pasted sesame cake blank and stick it on the wall of the hanging furnace face up. Bake it with sawdust fire or charcoal fire until it is cooked. Scrape it down with an iron shovel and hold it with a long spoon.
The third step is to pack them into bags at the later stage. Every 16 of them are wrapped in a package of paper, which is cylindrical in shape. Forty-eight of them are wrapped in three packages altogether. If making sweet crisp pancakes, salt can be changed into Baitang, boiled with warm water and reconciled with flour. It is slightly thinner than salty pancakes. Five hundred grams of flour can make pancakes in three and a half packages, totaling fifty-six.

In August 1956, a total of 12 households in Zhoucun District organized a public-private joint venture Zhoucun Pancakes Factory (renamed Zhoucun Commercial Branch Non-staple Food Processing Factory in 1958) and later Zhoucun Food Factory (now the predecessor of Shandong Zhoucun Pancakes Co., Ltd.).
In 2011, the Zhoucun Museum of Burnt Cakes, which integrates pictures of Zhoucun Burnt Cakes and on-site exhibition of real objects, production of traditional techniques, on-site sales and interaction of tourists, officially opened, and became a highlight of the scenic spot of the ancient mall.
On September 18, 2015, Zhoucun BBQ, which invested more than 300,000 yuan, settled in the social practice base of Zibo Mechanical and Electrical Engineering School.
From September 13 to 17, 2018, the Fifth China Intangible Cultural Heritage Exposition was held in Jinan, in which Zhoucun's cookie making skills were displayed.
